Eggs & Bacon, more and more Bacon!

I felt that my first post should consist of my favorite food…bacon. I am one of those people who love to ‘brunch’ because hey, it’s cool right? Yes, if you are with your super awesome husband or your gal pals, brunch is a great time to order a cappuccino and breakfast sandwich and gab over the latest bachelorette contestants. And of course, the obligatory snapchat story that chronicles each bite you take and the self-taught camera man angles that really make your coffee look better than any other coffee in the world….be jealous fellow snapchatters.

So here we go, jot down these 5 ingredients that will take your breakfast sandwich from morning filler-food to deliciousness: English muffin, 4 eggs, 4 strips of bacon, mozzarella cheese, and of course, butter. Pre-heat the oven to 350, while the oven is pre-heating cut each English muffin into 2 halves, and spread two pieces of butter on each side. Place into the oven straight on the rack and forget about them until the end. Next, in a medium sized frying pan, melt butter on medium heat until there is a thin layer of butter on the pan. Mix the four eggs in a small bowl, for fluffy eggs add a splash of milk. Pour the eggs into the frying and start to scramble. When the eggs are half way cooked, add a few sprinkles (sprinkle = best measurement) of mozzarella cheese and continue to scramble the eggs. Meanwhile, place 4 strips of bacon on your bacon tray. Speaking of bacon trays, Bed Bath and Beyond has the best bacon tray in the world!

Pull out the English muffins, add scrambled eggs and bacon to the toasted muffin and you have yourself a perfectly cooked breakfast sandwich. This first recipe seems easy-peasy, but trust me…if you can scramble an egg, you are that much closer to opening your own breakfast restaurant.

*HINT: I never add salt to my eggs, if I want extra flavor I add shredded cheese that brings not only a hint of salt, but makes the eggs even creamier.
