Tomato Mozzarella Summer Salad

After being outside in 90 degree weather, it can be difficult to find time or energy to whip up a quick lunch. Worry no more, the summer salad is here! When I think of a ‘summer salad’ I immediately think of crisp greens, sweet dressings, and vibrant colors. The prep time for this salad is only 15 minutes and serves three people. To feed a larger group, simply double the recipe.


1 bag Hearts of Romaine Lettuce

2 vine ripe tomatoes

Fresh mozzarella cheese

1 cucumber

Light Caesar salad dressing

1 package of Perdue honey roasted carved chicken breast



  1. Rinse lettuce and let drain
  2. In a medium skillet, cook diced chicken on high for 5 minutes
  3. Turn heat to medium and cover chicken
  4. Dice each tomato into three sections
  5. Finely dice cucumber
  6. Cut 4 thin pieces of mozzarella cheese length wise
  7. Combine all ingredients!


Like I’ve said before, the steps for many of my dishes are extremely simple. There are many times when I believe that putting in more time cooking can results in a greater meal. However, if you’re anything like me, you do not have time to spend your entire day cooking and shopping for ingredients. In my opinion, meals that consist of fewer ingredients with less steps result in a delicious finished product! I also find it helpful to try and plan out at least two full lunches and two dinners before you head to the grocery store. To me, there is nothing worse than walking into a grocery store without a list! My mind wanders and I end up walking out with yesterday’s sushi and a pack of Reese’s Cups.
