Banana Nut & Peanut Butter Muffins

I know, it sounds delicious, because it is! Without fail, I crave a dessert every night. I sometimes try to suppress my cravings for sweet chocolaty goodness with a healthy greek yogurt and granola, but that seldom works. This sweet muffin recipe will calm any sweet tooth without the overwhelmingly sweet flavor of added sugars.

1 ½ cups all-purpose flour

1 ½ teaspoon baking powder

¼ teaspoon baking soda

1/8 teaspoon salt

2 egg whites

1 cup mashed bananas

¾ cup white sugar

3 tablespoons vegetable oil

1 teaspoon lemon zest

¼ cup chopped walnuts

If you love peanut butter:

For my muffin creation, I also used peanut butter! After you have filled each muffin cup in the pan, scoop peanut butter onto the top. The peanut butter will melt into the center of the muffin and create a gooey center. A peanut butter crust will also add extra flavor with each bite!
