Crispy Chicken Parm

One of my favorite Italian dishes has always been Chicken Parmesan. However, I never loved the amount of calories that joined the fried chicken goodness. That is why I wanted to take a “healthier” spin on the chicken parm.


Four thin cut chicken breasts

Bread crumbs

4 large grape tomatoes

Mozerella cheese (skim/shredded)

Fresh basil



Olive oil


1. Preheat oven to 350 degrees

2. In a mixing bowl, mix one large egg

3. Dip each piece of chicken in the egg yolk until covered

4. In a separate mixing bowl, lightly cover the chicken breast with bread crumbs

5. Place chicken on cooking sheet and place in oven for 10 minutes

6. Add vegetable oil to deep based skillet

7. Remove chicken from oven and place in skillet on high

8. Cook chicken on each side for 3 minutes each

9. Let rest

10. In a separate baking pan, cut the tomatoes into thirds, add olive oil, salt and basil

11. Bake in oven for 8 minutes

12. Add fresh tomatoes to the top of the chicken

13. Add cheese
