Taco Bowls!

Nothing better than tacos, especially when they are in a bowl! Better yet, a bowl you can eat. It’s a taco! After running around all day, the last thing I want to do after dinner is clean up and wash the dishes. You can cut the time wasted and soap-usage with delicious soft tacos. First, buy fresh thin-cut chicken breast and pre-heat the oven at 350 degrees. Add garlic salt, pepper, butter and taco seasoning to the chicken, coat evenly. Cook for 30 minutes (until cooked through).

Saute green peppers, red peppers, and yellow onions with light salt and butter in a pan. Separately, cook Mexican rice and set aside. I love setting up a taco bar for dinner, even if it’s for two! Start with warmed taco shells, chicken, veggies, rice, cheese, salsa, sour cream and black beans. Oh, adding fresh lime margaritas to the mix can always brighten up a taco Tuesday!IMG_9204.JPG
