Ricotta Pasta

Last night I was craving Italian, again! I have been trying to stick to a healthier lifestyle, but sometimes you just need a little pasta. I wanted to try something new but simple. What better way to make a delicious dish than to go to the grocery store and improvise on ingredients? Luckily for me, it worked out. I want to share my creamy and cheesy pasta recipe with the world! Or at least, those who read my blog.

Ingredients:

Fresh basil

2 cups fresh grape tomatoes

Angel hair pasta

1 cup ricotta cheese (light or skim)

Garlic salt (to taste)

1 tsp thyme

1 tsp fresh ground black pepper

Olive oil

 

Steps:

  1. In a large pan, coat lightly with olive oil
  2. Add washed and diced grape tomatoes
  3. Add 1/4 cup fresh basil
  4. Garlic salt to taste
  5. Simmer for 5 minutes
  6. Mix in ricotta cheese
  7. Fold cheese into tomatoes and olive oil until a creamy consistency is created
  8. Add fresh black pepper
  9. Let simmer for 10 minutes
  10. On the side, boil 2 cups of angel hair pasta
  11. Mix cooked pasta into the pasta sauce to coat evenly
  12. Add fresh mozzarella cheese on top for flavor and enjoy!
