I must say that I get my cooking skills from my mother and grandmother. My mom cooked dinner at least 5 nights a week when I was growing up. There was nothing better than a warm southern meal after a long day. This is also the time that I learned butter was a major food group. As I got older, I took the skills that I learned over the years and adapted many recipes with a modern twist.
This recipe is for a 7 layer salad. I absolutely love eating salads, and the best part it that they tend to be healthier than most other options. However, there is nothing worse than eating a salad that is not filling. This 7 layer salad includes a vast ingredient list but is simple to make. It is perfect for a family dinner or even a cook out.
1 1/2 cup of light mayonnaise
2 Tb sugar
1 large head of chopped iceberg lettuce
1 medium red onion (diced)
1 bag of frozen peas
5 hard-boiled eggs
3 cups of sharp cheddar cheese
1 pound of cooked bacon
- In a medium mixing bowl, combine the mayonnaise and sugar to make the dressing. Set aside.
- In a large baking bowl (clear), layer the salad in the following order: lettuce, onion, peas, sliced eggs. Repeat until all ingredients have been used.
- Completely cover the salad with the dressing.
- Sprinkle with Cheese.
- Add bacon crumbles.
- Cover in plastic and place in the refrigerator for 1 hour
