5 Layer Taco Casserole

If you ask me, a delicious Sunday night dinner can set up a perfect work week. Tonight’s meal consists of corn tortillas, seasoned chicken, vegetables and cheese. The best part is that everything is in one dish and you can taste all of the amazing flavors in one bite!

Ingredients:

Soft corn tortillas

1 pound of fresh chicken tenderloins

1 large tomato

1 yellow onion

1 can of black beans

1 package of monterey jack cheese (shredded)

1 small lime

1 can of chicken broth

Garlic salt

Pepper

Chili powder

Chicken Mix Steps:

  1. Preheat oven to 400 degrees
  2. Dice chicken into bite sized pieces
  3. Cook chicken in frying pan until golden brown
  4. Add diced onions
  5. Turn heat to simmer and add 1 can of chicken broth
  6. Add black beans
  7. Add garlic salt, pepper, lime juice, and chili powder and stir
  8. Let chicken mixture simmer for 10 minutes

Layering Steps:

  1. Spray pam in a deep baking dish
  2. Line bottom of dish with 4 corn tortillas
  3. Sprinkle cheese to cover the tortillas
  4. Dice tomato length wise and place a few slices over the tortillas
  5. Add a layer of chicken mixture
  6. Add 4 tortillas to the top of the mixture
  7. Sprinkle cheese
  8. Add remaining chicken mixture
  9. Squeeze lime juice on top
  10. Add remaining cheese and 1 corn tortilla (rip a part and sprinkle) to the top of the casserole
  11. Bake for 20 minutes
  12. Enjoy!

Serves: 4
