Baked Apple Crust-less Pie

As the holiday season rapidly approaches, I decided to pull out the old family holiday recipes. Then, I realized that no one on earth should eat this much sugar and butter. I wanted to find a healthy twist on an apple pie. But how? This part is easy; the best part of the pie is the baked apples. With that stoke of brilliance, I ran to the grocery store, and by run I mean a brisk walk to the car followed by a 3 minute drive, and began my search for the perfect apple. This baked dessert is rich and decadent without all of the calories.

4 large apples for baking (type does not matter)

1 cup of granola

½ cup of brown sugar

¼ cup of sugar (Splenda or Truvia)

½ cup of melted butter

1 tablespoon of freshly ground cinnamon

1 teaspoon of salt

Sugar free vanilla frozen yogurt

Sugar free caramel sauce

  1. Preheat oven to 350 degrees
  2. Peel apple
  3. With a large cutting knife, slice the apple into thin slices down to the core, do not fully cut the pieces from the apple
  4. In a mixing bowl, combine melted butter, sugar, cinnamon and salt
  5. Lightly brush the butter mixture onto the apple slices
  6. Bake for 30 minutes
  7. Remove from oven and sprinkle the apples with brown sugar and granola pieces
  8. Bake for another 25-30 minutes or until apple slices are tender
  9. Remove from oven, let cool for 5 minutes
  10. Add sugar free vanilla frozen yogurt and caramel on top of the apples for more flavor!
