Garlic and Lemon Chicken with Basil and Red Pepper Quinoa

One of the easiest and healthiest meals that I like to make is garlic chicken with lemon zest. This meal is quick and delicious with a side of basil and red pepper quinoa, roasted corn and crisp peppered lettuce. I cooked this meal after a long gym session when part of me wanted to indulge in a mini doughnut from down the street, while the other part of me knew that I needed to keep strong with eating healthier meals. With the right combination of flavors, you can’t even tell that this meal is good for you! Let’s fuel your body and get cooking!

Garlic and Lemon Chicken

Ingredients:

1 pound of skinless chicken strips (chicken breast)

1 lemon

Garlic salt

Pepper

Salt

¼ cup of softened butter

Steps:

  1. Place chicken strips in a large mixing bowl
  2. Squeeze ½ lemon over top of the chicken
  3. Add garlic salt, pepper and salt to mixing bowl
  4. Mix until chicken is fully covered
  5. Place a large skillet on the stove top and turn to high heat
  6. Add butter to skillet
  7. Add chicken
  8. Cook until golden brown
  9. Cover chicken to keep warm

 

Basil and Red Pepper Quinoa

Ingredients:

¾ cup of uncooked quinoa

3 teaspoons chopped basil

3 teaspoons finely chopped red pepper

Salt

Pepper

Steps:

  1. Add quinoa to a sauce pan with 1 – ¾ cup of water
  2. Bring contents of quinoa to a boil
  3. Add seasoning, red pepper and basil to quinoa
  4. Turn to medium heat and let quinoa cook for 20 minutes
  5. Turn off heat and cover to cool

Roasted Corn

Ingredients:

1 small can of crisp corn

3 teaspoons of butter

Garlic salt

Pepper

Steps:

  1. Add frying pan to stove top and turn to a high heat
  2. Add butter to pan
  3. Add corn and seasoning to pan
  4. Cook until golden brown

Combine all ingredients onto a plate in three distinct sections. Add crisp iceberg lettuce with cracked pepper to the plate for a fresh taste. Enjoy!
