Chicken Fried Rice

I have been looking for a dinner recipe that could feed multiple people. What better way to feed the masses than with a tasty and filling chicken fried rice? To me, the chicken thigh may be one of the most flavorful cuts of meat. If properly prepared, the chicken thigh becomes juicy with a crisp layer of skin while baking in the oven.

That is why I decided to combine two of my favorite things, rice and chicken. Pull out your biggest frying pan and let’s get cooking!

Ingredients:

4 large skinless and boneless chicken thighs

2 ½ cups of white rice

1 red pepper

1 green pepper

1 yellow pepper

Fresh shallots

½ cup of frozen peas

¼ cup of low sodium soy sauce

Garlic salt

Pepper

Butter

Steps:

  1. Prep: Dice chicken thighs into small pieces
  2. Prep: Wash peppers and cut into small pieces
  3. Prep: Dice shallots into small pieces
  4. Heat butter in a large frying pan until the butter begins to melt
  5. Add chicken thigh pieces to frying pan and set burner to a high heat
  6. Sprinkle garlic salt and pepper on chicken and cover
  7. Cook rice in a separate pan and set aside
  8. Sautee peppers in a separate frying pan and set aside
  9. Uncover chicken after 5 minutes and begin to stir until chicken is fully cooked
  10. Add frozen peas to the frying pan
  11. Add rice to frying pan
  12. Add soy sauce to frying pan
  13. Stir ingredients until mixed
  14. Add peppers and shallots to the rice mixture
  15. Reduce burner to a medium heat
  16. Cover and let simmer for ten minutes
  17. Taste dish
  18. Add more soy sauce if desired
  19. Enjoy!
