Honey Lime Chicken Enchiladas

I’m hungry. Do you feel like you hear that word a lot? Or if you’re like me, you say it? Well, you landed on the perfect page with the perfect recipe to solve your hangry issue. Yes, hangry. This Honey Lime Chicken Enchilada recipe is full of flavor and packs a slightly spicy punch.



4 soft flour tortillas

.75 – 1lb skinless chicken strips or breast

1 package of red enchilada sauce

¼ cup heavy cream

1 lime

¼ cup of honey

Fresh black pepper (to taste)

Chili powder (to taste)

1 cup Monterey Jack Cheese (shredded)

(Serving size: 2)



  1. Preheat oven to 350 degrees
  2. In a mixing bowl combine enchilada sauce and heavy cream
  3. Stir sauce until smooth and set aside
  4. In a mixing bowl combine honey, fresh lime juice, pepper and chili powder
  5. Stir until smooth
  6. Toss in diced chicken and cover
  7. Let chicken marinate for at least 15 minutes
  8. Add butter or Pam to a large frying pan
  9. Add chicken and cook until golden brown
  10. Lay out the tortillas
  11. Add cheese to cover each tortilla
  12. Add diced chicken to each tortilla
  13. Roll the tortilla tightly
  14. Add ½ of the enchilada sauce to a medium baking dish
  15. Add rolled tortillas
  16. Add remaining sauce
  17. Sprinkle cheese on top for extra flavor
  18. Bake for 25 minutes
  19. Enjoy!
