Cauliflower Fried Rice with Teriyaki Chicken

I have not been able to sit down and write out one of my recipes in a while. What better way to get back in the blogging game than to make something that I’ve never had before. I was very skeptical of this “cauliflower rice” but I’ve tried it and I’m obsessed. If you follow my recipe below you will be able to mask the veggie-ness of cauliflower. 

2 cups of cauliflower rice 
6 boneless and skinless chicken thighs
Bell peppers
Yellow onion
4 tablespoons of teriyaki sauce
3 tablespoons of soy sauce
Garlic salt
1 egg
Olive oil

1. Wash and cut chicken thighs into smaller sizes
2. Preheat a large frying pan to a high heat
3. Add seasoning to chicken 
4. Add chicken to frying pan and cook until golden brown
5. Dice peppers and onion
6. Add vegetables to another large frying pan and turn to a high heat
7. Add teriyaki sauce to vegetables and continue to sautée
8. Add cooked chicken to the frying pan with peppers and turn to a lower heat as the peppers continue to cook down
9. Add olive oil to another frying pan and turn to a high heat
10. Add cauliflower rice to frying pan with soy sauce and stir
11. Cook cauliflower on a medium heat for 7 minutes
12. Crack egg into a bowl and scramble 
13. Add egg to cauliflower and mix until the rice reaches a fried rice consistency 
14. Plate rice and add chicken with mixed veggies on top
