Quinoa Casserole

Healthy recipes don’t have to be tasteless. As I move forward with my clean eating plan, I took the time to develop more clean dinner recipes. Tonight’s meal is absolutely delicious. The crisp onions and soft sweet potato will be a sure favorite!

Ingredients:

1/2 cup of black beans

1 yellow bell pepper

1 lime

1 1/2 cup quinoa

1 large red onion

2 sweet potatoes

2 tablespoons olive oil

Chili powder (amount to taste)

Pepper

Salt

Parsley

Steps:

1. Preheat oven to 375 degrees

2. Wash and dice sweet potatoes into small chunks

3. Wash and dice onion into small chunks

4. Spray large baking pan with olive oil cooking spray

5. Spread sweet potatoes and red onion on the baking pan

6. Bake for 15 minutes

7. Remove from oven

8. Wash and dice bell pepper and add too the baking plan

9. Top vegetables with pepper, olive oil, chili powder, parsley and salt

10. In a small sauce pan, prepare quinoa

11. Bake vegetables and cook quinoa for another 15 minutes

12. Remove from oven and drizzle all ingredients with fresh lime juice

13. Add all ingredients to a casserole dish and bake for another 10 minutes

14. Let cool and then serve!
