Parsley Penne Pasta

Move over Hamburger Helper, I’ve got a delicious healthy twist on a childhood favorite to try. I am someone who loves pasta. However, now that I am developing healthier recipes with gluten free options, I want to make sure that I do not lose any of the flavor that I am used too. I have found a delicious gluten free noodle from Ronzoni. The noodles taste just like regular pasta, no joke! The recipe below serves 6 people, but I made this for my husband and I, and used the left overs as meal prep for lunch this week!

 

Ingredients:

  • 1 box of Gluten Free Ronzoni Penne Pasta
  • 1 cup of skim milk (Fat Free) shredded mozzarella cheese
  • 1 diced yellow onion
  • 1 pound of lean ground beef
  • ¼ cup of fresh parsley
  • Salt
  • Pepper

 

Steps:

  1. Add 4 cups of water to a large sauce pan
  2. Bring water to a boil
  3. Add pasta to boiling water for 15 minutes or until done
  4. Add canola oil spray to a frying pan
  5. Add diced yellow onion and sauté until lightly browned
  6. Add ground beef
  7. Cook beef until brown
  8. Drain noodles and meat
  9. Add cheese to noodles and stir until smooth
  10. Add ground beef and freshly diced parsley to noodles and stir
  11. Serve and enjoy!
