There is nothing better than homemade Christmas cookies to kick off the holiday season. I’ve dabbled in the delicious cookie creations around the holidays each year, and I think I finally found my go-to recipe. These Peppermint White Chocolate cookies are absolutely amazing. They taste like a little piece of Christmas. Yes, they are that good!
Ingredients:
- 1 ½ cup gluten free flour
- 1 cup unsweetened cocoa powder
- 1 tsp baking soda
- ½ tsp salt
- 1 cup softened butter
- ½ cup brown sugar
- ¾ cup granulated sugar
- 2 eggs
- 1 tsp vanilla extract
- 2 cups white chocolate chips
- 2 crushed candy canes
Steps:
- Preheat oven to 350 degrees
- In an electric mixing bowl, combine sugar, brown sugar and butter until well combined
- Add cocoa powder, flour, and baking soda and whisk until smooth
- Mix in eggs and vanilla extract and whisk until smooth
- Roll dough into small balls and place on a baking sheet at least 2 inches apart (I use an ice cream scoop to place dough on the baking sheet)
- Bake for 10 minutes
- Remove from oven and let cool for 20 minutes
- Use a food processor or mallet to crush peppermint into small pieces
- Add white chocolate to a microwave safe bowl and heat until smooth
- Using a spoon, add melted white chocolate to half of the cookie
- Immediately sprinkle peppermint onto the white chocolate
- Let cool for 30 minutes
