Peppermint White Chocolate Cookies

There is nothing better than homemade Christmas cookies to kick off the holiday season. I’ve dabbled in the delicious cookie creations around the holidays each year, and I think I finally found my go-to recipe. These Peppermint White Chocolate cookies are absolutely amazing. They taste like a little piece of Christmas. Yes, they are that good!

  • 1 ½ cup gluten free flour
  • 1 cup unsweetened cocoa powder
  • 1 tsp baking soda
  • ½ tsp salt
  • 1 cup softened butter
  • ½ cup brown sugar
  • ¾ cup granulated sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 2 cups white chocolate chips
  • 2 crushed candy canes

  1. Preheat oven to 350 degrees
  2. In an electric mixing bowl, combine sugar, brown sugar and butter until well combined
  3. Add cocoa powder, flour, and baking soda and whisk until smooth
  4. Mix in eggs and vanilla extract and whisk until smooth
  5. Roll dough into small balls and place on a baking sheet at least 2 inches apart (I use an ice cream scoop to place dough on the baking sheet)
  6. Bake for 10 minutes
  7. Remove from oven and let cool for 20 minutes
  8. Use a food processor or mallet to crush peppermint into small pieces
  9. Add white chocolate to a microwave safe bowl and heat until smooth
  10. Using a spoon, add melted white chocolate to half of the cookie
  11. Immediately sprinkle peppermint onto the white chocolate
  12. Let cool for 30 minutes
  13. Enjoy!
