Breakfast Casserole

I am obsessed with breakfast; it is my favorite meal of the day. Which is ironic because when I was little I hated breakfast. My breakfast in high school used to consist of a Nutri-Grain bar and one of those Jamie Lee Curtis yogurts. Not anymore. I could eat scrambled eggs and bacon with a side of gluten free toast every morning.

 

If you are a breakfast lover like me, you know that the best tasting breakfast comes in the form of a casserole. This casserole recipe is super simple and tastes delicious!

 

Ingredients:

  • 6 large eggs
  • 1 cup of skim milk
  • 1 cup of shredded hash browns
  • 1 cup of ground turkey sausage
  • ½ cup of cheddar cheese
  • Salt
  • Pepper
  • 4 tsp butter

 

Steps:

  • Preheat oven to 350 degrees
  • Whisk eggs and milk together in a mixing bowl and set aside
  • Add 2 tsp butter to a large pan and turn to a medium heat
  • Add hash browns and cover to simmer
  • Cooke hash browns until golden brown and set aside
  • In a separate pan, add butter and turkey sausage and turn to a high heat
  • Cook sausage until browned and set aside
  • Add hash browns, sausage and cheese to a large casserole dish and mix together
  • Slowly pour the eggs and milk mix into the dish
  • Bake for 30 minutes
  • Remove from oven and let cool for at least 5 minutes
  • Enjoy!
