Fiesta Peppers

Kick off taco Tuesday with fiesta peppers! I love making stuffed peppers for the family, but I’m not always a fan of the large amount of peppers that I end up using. Instead of trying to navigate around a large red pepper, I decided to slice the pepper horizontally and create a cheesy bottom to the pepper bowl. Let me tell you, it’s amazing.



  • 1 large red bell pepper
  • 1 cup of sweet yellow corn
  • ½ lb. lean ground beef
  • 1 cup of Mexican cheese (shredded)
  • 1 avocado
  • Blue corn tortilla chips



  1. Wash red bell pepper and slice horizontally
  2. Remove the middle part of the pepper so that you are left with an O shape
  3. Preheat oven to 350 degrees
  4. Place parchment paper on a baking sheet and spray with canola oil
  5. Place each slice of red pepper on the baking sheet
  6. Add a handful of cheese in the middle of each pepper and pat down until smooth
  7. Top each pepper with corn and cheese
  8. Bake for 15 minutes
  9. Carefully remove pepper from baking sheet with a spatula, the cheese should have melted on the bottom
  10. Top with avocado, tortilla chips and more cheese
