Mediterranean Salad

I am on the healthy grind with a new salad recipe! I love salads, but I have to have a lot of flavor profiles in order to enjoy the meal. I decided to develop a new recipe that incorporates multiple textures and flavors while still being hardy enough to keep you full. The recipe below is for a full dinner salad that serves 3 people.

 

Ingredients:

  • 1 bag of spring salad mix
  • 1 cherry tomato
  • ½ cup feta cheese
  • 1 green pepper
  • 1 cup of quinoa (cooked)
  • 1 cucumber
  • 1 lb. chicken breast
  • ¼ cup olive oil
  • Salt
  • Pepper
  • Garlic salt
  • 3 tablespoons butter

 

Steps:

  1. Dice chicken into thin strips
  2. Add skillet to stove top and turn to medium
  3. Add butter to skillet and let melt
  4. Add chicken to skillet
  5. Add salt, pepper, garlic salt and olive oil to chicken and continue to stir
  6. Once chicken is cooked through and slightly golden browned, remove from heat and set aside to rest
  7. Wash lettuce and drain
  8. Add lettuce to a large mixing bowl and set aside
  9. Wash and dice tomatoes
  10. Wash and dice cucumber into thin slices
  11. Wash and dice green pepper into thin slices
  12. Add cooked quinoa, cucumber, green peppers, tomatoes and chicken to lettuce and combine until mixed thoroughly
  13. Top with feta

Tip: This salad tastes best when topped with a Greek dill salad dressing!
