Mozzarella Pizza Bites

I’m ready to kick off August by bringing my talents back to the kitchen. I’ve been away training for a new job and had to eat out every night. While the food in Cleveland was delicious, there’s nothing like home cooking that makes you feel at peace.

As someone who eats gluten free, it can be difficult to find richer flavors that keep you full without all the carbs. My husband and I were in the mood for pizza, just not gluten free dough again. That is how I came up with red pepper-based pizza bites! This dish is very easy to cook and tastes great! Let me know your thoughts!



  • 2 large red peppers
  • 6 oz. fresh mozzarella cheese
  • ½ pound of lean ground turkey
  • 1 cup of marinara sauce
  • 1 tablespoon fresh basil
  • 1 tablespoon fresh parsley
  • Olive oil



  1. Preheat oven to 425 degrees
  2. Wash peppers
  3. Dice peppers in thick horizontal chunks (will look like an oval)
  4. Scoop out any seeds
  5. Brush cooking sheet with olive oil
  6. Place sliced red pepper on tray
  7. Bake peppers for 5 minutes
  8. While peppers are in the oven to soften, cook ground turkey in a skillet until golden brown (add salt and pepper to taste)
  9. Add marina sauce and basil to ground turkey and combine until the meat is completely covered
  10. Remove peppers from oven
  11. Add turkey and marinara mix to peppers
  12. Bake for 5 minutes
  13. Slice mozzarella cheese into thick pieces
  14. Remove peppers from oven and add cheese to the top of each pepper
  15. Sprinkle fresh parsley on top
  16. Bake for 10 minutes
  17. Remove from oven and let cool for 5 minutes
  18. Enjoy!
